Happy Monday friends! According to the calendar, Spring is here tomorrow. Also, according to the forecast for the week, another 8-10 inches of snow is coming our way this week. Clearly, we are not getting spring this week or anytime soon. But that is not going to stop me from enjoying spring flavors in my kitchen like this blueberry lemon pound cake and wishing it was warm again. I know it will be here soon but in the meantime, I will make all the lemon desserts.

Spring is in the air and we are celebrating with this lemon poppyseed bundt cake today. Wait I lied, Spring is NOT in the air in my neck of the woods. I had to clean snow off my car this morning and it is a frigid 32 degrees as we speak. But I refuse, I refuse to allow the snow to take away the wonders of spring. The great flavors of spring desserts that get us in the mood for what summer brings are here to be enjoyed.

I think lemon poppyseed is one of the hallmarks of summer. It’s refreshing and a classic combo that I make sure I indulge in every spring. These lemon poppy seed muffins are usually my go-to and I am glad I converted one of my favorite lemon bundt cakes into a lemon poppy seed bundt cake. It’s light, airy and very moist!! It’s everything a pound cake should be and I love the speckled poppy seeds adding a little bit of crunch to it all.

Add it to your baking list, bake it to show winter we are done with her temper tantrums and let’s all wish for sunny spring days. Unless of course if you are already enjoying spring then in that case, just make yourself this delicious and beautiful cake.

Lemon Poppy Seed Bundt Cake

Lemon Poppy Seed Bundt Cake

This lemon poppy seed bundt cake is light, airy and moist. It is the perfect recipe for all your spring celebrations! 

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 ¼ teaspoons baking powder
  • ¾ teaspoons salt
  • ¼ cup (1/2 stick) unsalted butter, room temperature
  • 1 cup granulated sugar
  • ¼ cup extra virgin olive oil
  • zest of 1 lemon
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • juice of 1 lemon
  • ½ cup buttermilk, room temperature
  • 1 tablespoon (or more) poppy seeds

For Lemon Glaze:

  • 1½ cups confectioners’ sugar
  • 2 tablespoons lemon juice
  • 1 to 2 tablespoons milk, as needed

Directions:

  1. Preheat oven to 350 degrees F. Grease a nonstick 6-cup bundt pan. In a medium bowl, whisk together flour, baking powder, and salt.
  2. In the bowl of an electric mixer, beat together the sugar, oil, and butter on medium-high speed until fluffy, about 5 minutes. Scrape down the sides of the bowl as needed. Add in the eggs, one at a time and beating until combined. Beat in vanilla extract and lemon juice.
  3. Add in a third of the flour mixture and half of the buttermilk. Mix until just combined. Then add another third of the flour and the rest of the buttermilk. Mix again until just combined. Scrape down the side of the bowl as needed. Add the rest of the flour and mix for 30 seconds. Finish incorporating the flour into the batter by hand with a rubber spatula to avoid over mixing. Fold in the poppy seed.
  4. Pour the batter into the prepared pan. Smooth the top.
  5. Bake until cake is golden brown and a toothpick inserted into the center comes out clean, about 40-45 minutes. Transfer to a cooling rack and allow the cake to cool in pan for at least 20 minutes. Using a small sharp knife, run it around the edge of the pan to loosen the cake and then invert the cake onto a cooling rack (lined with parchment paper) to cool completely.

For the Glaze:

  1. Whisk together all the ingredients in a small bowl. If the glaze is too thick, whisk in a tablespoon of milk, a little at a time.
  2. Just before serving, pour the glaze over the cake and allowing it to drip down the sides. Enjoy!

Hi friends! I have another simple how-to post for you today. I am starting with basics like how to frost a layer cake and now how to make one bowl chocolate cake. This chocolate cake recipe is the MOST popular recipe on my blog and I spend a lot of time responding to questions and emails from those of you just starting out on your baking journey. So here it is in one place, walking you through how I make my favorite one-bowl chocolate cake recipe. It’s the most decadent and moist chocolate cake that is perfect for your chocolate loving family.

To say this is simple is an understatement. Here are the ingredients needed for two 8-inch round cakes.

First, the dry ingredients include:

  • All-purpose flour
  • Granulated sugar
  • ⅓ cup cocoa powder (I used Ghirardelli but you can use any high-quality cocoa powder)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt

How To Make One Bowl Chocolate Cake

For the wet ingredients:

  • 1 large egg, at room temperature
  • ½ cup buttermilk, at room temperature
  • ½ cup strong black coffee, hot
  • ¼ cup vegetable oil
  • 1½ teaspoons pure vanilla extract

How-To Make One Bowl Chocolate Cake

Combine the dry ingredients in a large bowl. Whisk together to make sure it’s all well combined. In a separate bowl, you want to also whisk together your wet ingredients. I like adding the hot coffee last slowly to ensure not scrambling the eggs.

Add the wet ingredients to the dry and mix until well combined. I like beating on medium speed for 2-3 minutes to really mix the batter.

As you can see it is a thin batter but that is expected. Before baking, I like using a spatula and give it one more mix.

The key to any great cake is in the baking. I love using Fat Daddio’s baking pans – these 8-inch rounds are my go-to for celebration cakes. Butter and flour your pans really well before adding your cake batter. I use PAM baking spray (not sponsored, just love them) which mixes butter and flour for easy greasing. It has never failed me even for intricate bundt cake designs like this passion fruit bundt cake (know on wood).

How-To Make One Bowl Chocolate Cake

Divide your batter evenly into two 8-inch round cake pans. You can double this recipe to make three 9-inch cakes.

Once the batter is in the cake pans, give the pans a few good taps on the counter to release any air bubbles.

Bake the cake at 350 degrees F for 22-25 minutes or until a skewer inserted into the center comes out clean.

Let cool in pan for at least 10 minutes. Invert to a wire rack and let cool completely.

There you have it, friends. An easy chocolate cake to make and one that will soon become your go-to if you haven’t tried it.

This one-bowl chocolate cake recipe is one of my favorites. The coffee in the cake batter enhances the chocolate flavor making it, even more, richer (aka decadent). Using vegetable oil instead of butter ensures maximum moistness (is that even a thing??). It’s my go-to recipe and you can see I use it in a base from everything from this Chocolate Cake with Salted Caramel Frosting to these Chocolate Cupcakes.

Substitutions:

  • You can use just plain hot water in place of the coffee.
  • You can also use 1/4 cup coconut oil to make this recipe dairy-free.
  • You can double the recipe and bake in three 9-inch round cake pans. Adjust bake time accordingly (about 25-28 minutes).
  • You can also bake this in cupcake forms. Bake the batter in cupcake liners for 12-15 minutes.

How-To Make One Bowl Chocolate Cake

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • ⅓ cup cocoa powder (I used Ghirardelli)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • 1 large egg, at room temperature
  • ½ cup buttermilk, at room temperature
  • ½ cup strong black coffee, hot
  • ¼ cup vegetable oil

Directions:

  1. Preheat oven to 350 degrees F. Grease and line two 8-inch cake pans with parchment paper. Grease the parchment.
  2. Sift together all the dry ingredients into the bowl of an electric mixer.
  3. In a medium bowl, combine all the wet ingredients using a whisk.
  4. Mix the dry ingredients on low speed for 1 minute. Stop the mixer and add the wet ingredients. Mix for 2 minutes on medium speed and scrape the sides and bottom of the bowl. Mix for an additional minute on medium speed until well combined.
  5. The batter will be thin. Divide the batter evenly into the prepared pans.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out almost clean.
  7. Cool cakes in pan on wire rack for 10 minutes before inverting onto the wire racks to cool completely.

Before we get to the end of summer here, I want to squeeze in one more summer recipe!! Yes I know I know, Labor Day is the unofficial end of summer but we technically still have three weeks until the first day fall so please forgive me.  This strawberry roll cake is a summer favorite and I am not sure why it took me this long to share it with you. It’s incredibly easy to make and even easier to customize to your family’s favorite berries. The sponge is a light and fluffy vanilla sponge that is filled with a whipped cream cheese strawberry filling and topped with an even lighter fresh whipped cream frosting.

I know we are all getting excited about fall and pumpkin season. Trust me, I am a pumpkin lover like no other. But I am also a fan of savoring the seasons as they happen. Summer is short and sweet and comes with a LOT of produce and flavors to enjoy before we burst out apple spice and cider. My garden is still full of tomatoes, cucumbers, peppers, and beans. So as I can, pickle and freeze all the vegetables, I will continue to enjoy summer’s bounty. Join me!!

I’ve made different versions of this summer roll cake and I am sharing today a strawberry version. For this strawberry roll cake, I used a great jelly roll base cake recipe. It is simple, light and fluffy. You can flavor the cake as you like example lemon zest. I used simple vanilla for my cake base. For the filling, I wanted something thicker than whipped cream so I opted for cream cheese frosting. Actually, it was my husband’s idea and it turned out great. Whipping in some heavy cream into the cream cheese made for a light and tangy filling. I also folded in some fresh strawberries into the filling for some more berries.

Finally, the cake is topped with a light homemade whipped cream. You can skip this but it was great for presentation and tasted great with it too.

So there you have it, a delicious strawberry roll cake as we say goodbye to summer. It was a busy and hectic summer for us but we enjoyed it. I am looking forward to all the pleasures of the crisp fall air and season.

Yield: 1 Roll Cake

Strawberry Roll Cake

A Summer Strawberry Roll Cake with a light and fluffy vanilla sponge filled with a whipped cream cheese strawberry filling.
Prep Time 20 minutes
Cook Time 8 minutes
Rest Time 2 hours
Total Time 2 hours 28 minutes

Ingredients

  • ¾ cup cake flour, sifted
  • ¾ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 4 large eggs, at room temperature, separated
  • 2/3 cup granulated sugar, divided
  • 2 teaspoons vanilla bean paste or vanilla extract
  • 1 cup confectioners’ sugar

Strawberry Cream Cheese Frosting

  • 2 cups fresh strawberries, hulled and sliced
  • ¼ cup granulated sugar
  • 8 ounces cream cheese, at room temperature
  • ¾ cup heavy whipping cream, cold
  • ½ cup confectioners’ sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F. Spray a 15 x 10-inch jelly roll pan with baking spray. Line with parchment and spray parchment again.
  2. In a small bowl, whisk together the flour, baking powder and salt.
  3. In a medium bowl or the bowl of your stand mixer fitted with the whisk attachment, beat the egg yolks and 1/3 cup of the sugar on high speed until thick, pale and ribbonlike. Add in the vanilla bean paste or extract. Beat until combined. Transfer the egg yolk mixture into a large bowl.
  4. Clean the bowl of the stand mixer. With the whisk attachment, beat the egg whites on medium speed until foamy. Gradually add in the remaining 1/3 cup granulated sugar. Increase mixer speed to high and beat egg whites until soft peaks form.
  5. Fold the egg whites into the egg yolk mixture in 2 additions, until just combined.
  6. Sift the flour mixture over the batter and fold in gently.
  7. Transfer the batter immediately to the prepared pan and spread evenly. You do not want to overwork the batter and deflate the air you just whipped into it.
  8. Bake cake until a toothpick inserted into the middle comes out clean, about 8 minutes.
  9. While cake is baking, dust a clean dish towel with the confectioners’ sugar.
  10. When cake is done, immediately loosen the sides of the cake from the pan and turn over onto the prepared towel. Peel off the parchment paper.
  11. Starting with one short end, roll up the cake and towel together and place it seam side down on a cooling rack. Let cake cool completely, about two hours.
  12. In the meantime prepare the filling and frosting. In a medium bowl combine the strawberries and sugar. Let sit for at least 20 minutes to macerate.
  13. In the bowl of your stand mixer, beat the cream cheese until smooth and creamy on medium speed, about 2-3 minutes. Add in the heavy cream, confectioner’s sugar and vanilla extract. Beat on medium-high speed until light and fluffy.
  14. Fold in half of the strawberries (without the juices) into the filling.
  15. Gently unroll the cooled cake and spread with the strawberry cream cheese filling, leaving a ½ -inch border.
  16. Re-roll the cake without towel. Refrigerate for at least 30 minutes before serving.
  17. Garnish the cake with confectioner’s sugar and strawberries. Or top with freshly whipped cream and strawberries.

There’s something about winter that makes you crave citrus. Wait…it must be the cold gloomy days and our cravings for warm sunny weather. This winter has been brutal but it is only January so I really shouldn’t complain. Nevertheless, winter citrus is one of my favorite things about the season and especially Meyer lemons that are only in season for a short period of time. This year, my first meyer lemon treat was this browned butter Meyer lemon cake. It is perfect for a weekend baking project when you just want something simple, sweet and delicious that will go with your morning coffee.

Hello friends! Since Valentine’s Day is just around the corner, I thought I’d revisit the first cake I ever baked. Did you know that my baking journey started with a heart-shaped red velvet cake? If you’ve been around here for a while, you probably know this already. In an attempt to be romantic for Valentine’s Day for my then fiance, I baked a heart-shaped cake, in a friend’s kitchen as I had no baking equipment in mine.
