Lemon Layer Cake Recipe

This classic lemon layer cake recipe was previously published in 2013 but I am updating the pictures and recipe.  
 A classic lemon layer cake recipe with a moist, tender lemon cake filled with lemon zest and fresh lemon juices. The cake is dressed in a beautiful ombre lemon buttercream perfect for Spring entertaining.
Hi friends! This lemon layer cake recipe is about four years old and I am reviving it with new pictures and an updated recipe for you. It is one of my favorite lemon cake recipes and rivals these classic lemon cupcakes for Spring desserts around my house.
We all know spring means lemon this and lemon that and I am a HUGE fan of lemon desserts all year round. There’s something about that lip-puckering tart and sweetness that’s just perfect. This lemon layer cake starts with a sweet, tender white lemon cake that is fluffy and moist. I love the double dose of lemon zest and lemon extract in the cake giving it a vibrant burst of lemon flavor. The cake is filled with an equally delicious whipped lemon buttercream AND a lemon curd filling. For the lemon curd filing, I used a homemade recipe you can find here but you can also use any store-bought lemon curd you like.

Coconut Tres Leches Cake

This Coconut Tres Leches Cake is your classic tres leche cake oozing with sweet coconut milk, dark rum and a fresh whipped coconut cream.

Tres leches cake has been on my baking list for a very long time and I am so happy I FINALLY got around to it. For a classic cake like this, I wanted to keep my first experience as close to the original as possible but with a slight twist. And you guessed it, I added sweet coconut to the mix in this coconut tres leches cake.

First, what’s Tres Leches Cake? It is basically a soft, airy sponge cake soaked in three different kinds of milk; evaporated milk, condensed milk and heavy cream. Yup, three different milks poured all over the cake and it soaks it ALL up. It’s AMAZING!!

White Chocolate Rose Cake for Mother’s Day

This white chocolate rose cake is perfect for Mother’s Day and will say “I love you Mom” more than a bouquet of flowers. 

This white chocolate rose cake is an incredibly moist vanilla bean cake with hints of floral rose water and whipped white chocolate frosting.

Don’t say what you thinking. THIS IS NOT A UNICORN CAKE. I refuse to be involved with said trend. But I will admit that the colors here ended up being similar.  I can defend it though.

Strawberry Lemonade Pound Cake

One of summer’s classic flavors = strawberry lemonade. So far this summer, I’ve whipped up these strawberry lemonade cupcakes and made a batch of this strawberry lemonade refresher for several gatherings. I’m adding to the collection this strawberry lemonade pound cake while celebrating the start of another year of partnership with Krusteaz.

My husband introduced me to Krusteaz almost 8 years ago when we were dating. He LOVES their waffle mix and is the only one he would buy. Back in the dating days when breakfast in bed were still a thing (ahem, can you tell the honeymoon phase is already gone?), he would always make waffles topped with a strawberry cream. One of my favorites breakfast to date. Naturally, when Krusteaz reached out to me two years ago about being an ambassador, I said yes. I’ve been transforming my favorite Krusteaz mixes since then.

This strawberry lemonade pound cake starts with a luscious lemon pound cake mix infused with strawberries and topped with a fresh strawberry glaze.

 

This strawberry lemonade pound cake uses one of my ultimate favorite mixes, the meyer lemon pound cake mix. It’s seriously the best pound cake you can get in 5 minutes of work. It’s moist, crumbly and oh so melty in the mouth. I’ve used it in this Easter coconut lemon bundt cake and you can see it here too in it’s unaltered state – meyer lemon pound cake. It’s a great starter for any lemon lover.

This cake starts with the box mix batter, adds a little bit of lemonade to that batter and swirls in fresh strawberry compote for the juicy berries in each bite. Once baked, a sweet strawberry glazed is used to finish off this beauty. It’s everything a summer cake should be. Light, bright and delicious. You need this strawberry lemonade cake in your life. It was just a few months ago in Charleston, SC that I first had a taste of a true southern hummingbird cake. I was finishing dinner with my gal pal Jessica from Jessica in the Kitchen when the waiter insisted we try this pineapple, banana and pecan spiced cake. Despite being full, I couldn’t resist a good cake and had to indulge. It was a moist, perfectly spiced cake, full of bold flavors. I knew I had to make one at home.

This is my Grandma's Apple Cake Recipe that's perfect for all your fall gatherings. With lightly spiced apples and a sweet glaze, each slice is comforting.

Happy Tuesday friends! I have a very special recipe for you today! Mr J’s grandma’s apple cake recipe handed down from my wonderful mother-in-law to me and now to you. It’s the perfect example of a family heirloom recipe filled with love, tastes comforting and brings back memories of your childhood.

A classic apple cake spiced with cinnamon and baked with chunks of apples in every bite. So sweet, so lovely and filled with grandma’s love and comfort at its finest. My MIL made this version pictured here recently when she came over to visit. She brought the whole pan over and I had to take a few pictures to share with you all.

This is my Grandma's Apple Cake Recipe that's perfect for all your fall gatherings. With lightly spiced apples and a sweet glaze, each slice is comforting.

As many of you know, I didn’t grow up baking so I didn’t inherit any grandma or family recipes. In fact, that is one of the reasons why I started this blog; to teach myself how to bake so I can create memories with my future kids and they can have family recipes to pass on down.

Luckily for me, my husband has some favorite family recipes and my in-laws have been great at sharing. A few years ago, my father-in-law shared his mom’s homemade fried donuts which are my go-to for anything fried cake donut. Today’s apple cake recipe is now a fall must-have in my kitchen.

The simplicity of older recipes is just incredible. Our grandma’s apple cake recipe starts with a lightly spiced cake batter wrapped with fresh apples and nuts for choice. The light spice allows the apple to shine in the cake and nuts add a bit of crunch. The resulting cake is moist, soft and comforting. Each slice is packed with warm apples and walnuts. There’s a sweet glaze ti top it all off but it’s not necessary in my opinion.

Grandma's Apple Cake Recipe

This is my Grandma’s Apple Cake Recipe that’s perfect for all your fall gatherings. With lightly spiced apples and a sweet glaze, each slice is comforting.

Ingredients:

For Cake:

3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon kosher salt

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon ground ginger

1 ½ cup vegetable oil

2 cups granulated sugar

3 large eggs

2 teaspoons pure vanilla extract

1 teaspoon freshl emon juice

3 medium apples, thinly sliced

1 cup toasted nuts (I used walnuts), chopped

For glaze:

1 cup confectioner’s sugar

2 teaspoons fresh lemon juice

Directions:

Preheat oven to 300 degrees. Grease and line a 9 x 13-inch pan.

In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger.

In a large bowl, whisk together the oil, sugar and eggs until pale in color, about 2 minutes. Beat in the vanilla and lemon juice.

Gently mix in the dry ingredients until just combined. Fold in the apples and nuts.

Transfer the batter into the prepared pan and smooth evenly. Bake for an hour or until a cake tester inserted into the center comes out clean. Remove from oven and let cool on a wire rack.

While cake cools, whisk the icing ingredients together, until spreadable. While cake is still warm, pour frosting over cake.

Brown Butter Cake with Maple Caramel Buttercream

This brown butter cake with maple caramel buttercream starts with a rich nutty brown butter cake wrapped in a sweet maple caramel buttercream.

I fell in love with naked cakes all over again a few weeks ago when I made my first wedding cake for a friend’s wedding. Aren’t they just elegant and beautiful? They are the perfect accessory to a rustic-themed wedding, shower and all. During the practice for the wedding cake, I made a few small layered cakes to get the frosting and technique just right. This brown butter cake with maple caramel buttercream was one of my test subjects. Based off my new favorite cupcake recipe (these caramel corn cupcakes), the cake has a rich nutty brown butter flavor and it’s wrapped in a sweet maple caramel buttercream. So so incredible and brings together great fall flavors.

I think I need to address my obsession with caramel. It is pretty obvious that I am a sucker for all things caramel. The minute I hear there is caramel in something, forget it, I am having it. Let alone a unique flavored caramel like bourbon caramel (yummm!!), honey caramel (oh my!!) or maple caramel (SOLD!!). Anyway, the point is I will do anything for a good caramel 🙂

Today’s adventure in this new flavored caramel started with Amanda’s challenge over at lucky number 3. If you don’t know her, she the amazing baker behind lucky number 3 and who happened to have won the second season of the great american baking show (she’s pretty talented so if you don’t follow her already, please do!). She started a monthly bake off challenge last month and she asked us (her baking enthusiast followers) to whip up any baked goods using the secret ingredient – maple caramel.

I paired the sweet, earthy maple caramel with a nutty moist brown butter cake. It’s a great pair and one you NEED to make for your holidays.

Even if you don’t get around to the cake, make this maple caramel. Then slather it in everything from ice cream to pancakes to drizzled over a warm slice of pear galette (coming soon!).

Brown Butter Cake with Maple Caramel Buttercream

Ingredients:

For the Maple Caramel Sauce

  • ½ cup dark maple syrup
  • 1/3 + 1 tablespoon heavy whipping cream
  • 1 teaspoon vanilla extract
  • ¾ cup granulated sugar
  • 3 tablespoon water
  • ¼ cup unsalted butter, diced
  • ½ teaspoon salt
  • 1 teaspoon white vinegar

 

For the cake:

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup whole milk, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt

For the frosting:

  • 1 cup (2 sticks) unsalted butter, softened at room temperature
  • 1/3 cup maple caramel sauce
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions:

For maple caramel sauce:

In a medium saucepan set over medium-low heat, cook the maple syrup until it begins to simmer. Once it starts simmering, reduce heat to low and cook until reduced in half, swirling the pan occasionally. It should take about 10 minutes and once it starts to smell toasted, it’s done. Let cool slightly.

In a microwave safe bowl, heat the cream until luke warm. Whisk in the vanilla extract.

In another medium saucepan, combine the sugar and water. Set over medium heat and cook without stirring. Once it starts to bubble, increase heat to medium-high. Do not stir. Do not walk away from pot. Watch until it turns from clear to light caramel. Continue cooking until the caramel is a deep amber color.

Remove from heat and whisk in the warm heavy cream continuously. It will bubble violently but continue whisking. Whisk in the maple syrup until combined. Then whisk in the butter until melted. Finally whisk on the salt and vinegar.

Transfer caramel to a heatproof container and cool to room temperature.

For the cake:

Preheat to 350°F. Grease two 6-inch round cake pans with baking spray and line with parchment. Grease parchment.

In a medium sauce pan set over medium heat, melt the butter. Cook the butter, swirling occasionally, until the butter is browned. Transfer to a large bowl and let cool slightly, about 5 minutes.

Whisk in the sugar, eggs, milk and vanilla extract. In another small bowl, whisk together the flours, baking powder and salt. Add the dry ingredient into the wet ingredients. Mix until gently combined.

Divide the batter equally into the prepared pans. Bake in preheated oven for 22-25 mins or until a cake tester inserted into the center comes out clean.

For the frosting:

Beat the butter and caramel on medium-high speed until light and fluffy. Add in the rest of the ingredients and mix on low speed to combine. Increase speed and beat frosting until fluffy, about 2-3 minutes.

Fill and layer the cake layers with the frosting. Drizzle with caramel sauce and decorate as desired.

I am back with another family legacy recipe for you. This time it’s mom’s pumpkin chocolate chip cake. Like this Grandma’s Apple cake recipe, this legacy recipe is not from my side of the family. It hails from one of my best friends mom. My friend wanted her mom’s pumpkin chocolate chip cake as one of the recipes at her recent wedding and she shared it with me since I was baking the sweets for the big day. I fell in love immediately with the taste and vibrant color of the cake that I had to beg her to let me share it with you all. It’s a moist pumpkin cake (thanks to the use of vegetable oil) packed with pumpkin flavor, hints of spices and indulgent chocolate.

The light spice allows the apple to shine in the cake and nuts add a bit of crunch. The resulting cake is moist, soft and comforting. Each slice is packed with warm apples and walnuts. There’s a sweet glaze ti top it all off but it’s not necessary in my opinion.

Grandma's Apple Cake Recipe

This is my Grandma’s Apple Cake Recipe that’s perfect for all your fall gatherings. With lightly spiced apples and a sweet glaze, each slice is comforting.

Ingredients:

For Cake:

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • 1 ½ cup vegetable oil
  • 2 cups granulated sugar
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon fresh lemon juice
  • 3 medium apples, thinly sliced
  • 1 cup toasted nuts (I used walnuts), chopped

For glaze:

  • 1 cup confectioner’s sugar
  • 2 teaspoons fresh lemon juice

Directions:

  1. Preheat oven to 300 degrees. Grease and line a 9 x 13-inch pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger.
  3. In a large bowl, whisk together the oil, sugar and eggs until pale in color, about 2 minutes. Beat in the vanilla and lemon juice.
  4. Gently mix in the dry ingredients until just combined. Fold in the apples and nuts.
  5. Transfer the batter into the prepared pan and smooth evenly. Bake for an hour or until a cake tester inserted into the center comes out clean. Remove from oven and let cool on a wire rack.
  6. While cake cools, whisk the icing ingredients together, until spreadable. While cake is still warm, pour frosting over cake.
  7. Enjoy!

Happy Monday friends!! How was your weekend? Is the holiday hustle and bustle catching up to you yet? It has for me and I feel like I am behind on everything. From finishing holiday recipes to Christmas shopping to holiday cards creation. It’s all flying by so fast. Thankfully, my amazing sister-in-law took the baby away this weekend and I was able to knock out four recipes for deadlines and this peppermint layered cake I’ve been meaning to make for years. It was the highlight of my weekend and brought all the holiday cheer I needed.
